Better than any fast food breakfast. Scrambled tofu, crispy potatoes, black beans, and all the fixings wrapped in a warm tortilla!

The Ultimate Breakfast Burrito

Tofu Scramble:

1 block firm tofu, crumbled • 1 tsp turmeric • ½ tsp garlic powder • ¼ cup nutritional yeast • Salt & pepper

Crispy Potatoes:

2 medium potatoes, diced small • 1 tbsp oil • ½ tsp paprika • Salt to taste

Assembly:

4 large tortillas • 1 can black beans, drained • 1 cup salsa • 1 avocado, sliced • Hot sauce • Fresh cilantro

Quick Method:

  1. Potatoes first: Cook diced potatoes in oil over medium-high heat for 12-15 minutes until crispy. Season with paprika and salt.
  2. While potatoes cook: Crumble tofu with hands. Mix in turmeric, garlic powder, nutritional yeast, salt, pepper.
  3. Scramble tofu: Push potatoes to side of pan, add tofu. Cook for 5-7 minutes, stirring occasionally, until heated through and slightly golden.
  4. Warm everything: Warm tortillas and black beans.
  5. BUILD: Tortilla base, add scramble, potatoes, beans, salsa, avocado. Roll tightly, folding in sides. DEVOUR!

Meal Prep Hack: Make 4-6 burritos, wrap in foil, freeze. Microwave for 2-3 minutes for instant breakfast all week. This has saved me countless mornings when I'm running late!
